If you like "eating with the terroir" or are into weird and inventive concepts in food preparation, Noma is the new place to be. This danish eatery has been recently sacred best restaurant in the world by San Pellegrino, a position that El Buly maintained for several years. Using the unique flora and fauna of Scandinavia, René Redzepi (chef of Noma Copenhagen) uses local ingredients in a very sophisticated way but in a warm atmosphere, making you feel at home.
Noma is located seaside in an old industrial complex, and the decor is minimalist, warm and somehow pastoral. I now have another reason to pass by Copenhagen and take the time to try all of these strange and attractive dishes. In the meantime, i just ordered the book.
